French and Swiss vacation suggestions

I'm hoping my European buddies on here might be able to offer some input: if you were going to spend a week in the French Riviera and a week in Switzerland near Sion around mid May, what should be on the must see/do list? Probably looking at area closer to Marseilles and Provence than Nice, but not sure yet. And in Switzerland looking at Sion, Lauterbrunnen, Jungfrau, and Matterhorn areas. Mostly interested in hiking moderate nature trails (2-8 miles), historical sites, and good food and beer/wine. Any areas in Switzerland still have cross-country skiing in May? Also, anything to see on the drive between Paris and these areas? Any travel tips? Any chance the French election at end of April could cause some sort of upsets?
